RAW Pomegranate Chocolate Tarte

Indulge in the tantalizing flavors of this exquisite Raw Pomegranate Chocolate Tarte, a gluten-free, paleo, and vegan delight. With a velvety smooth chocolate crust infused with pomegranates, crowned with luscious vegan marshmallows and a sprinkle of jewel-like pomegranate arils, every bite is a melt-in-your-mouth experience. It’s a refreshingly rich treat for summer that's both delicious and nutritious. Packed with powerhouse ingredients, it's one of my go-to desserts when hosting dinner parties. INGREDIENTS
2 cups almond flour
1/3 cup avocado oil
1/4 cup unsweetened cocoa powder
2 tbsps monk fruit syrup or honey
pinch of sea salt
1/2 cup coconut milk
1/4 cup pomegranate or passionfruit juice
1/2 cups semi-sweet chocolate chips
1 cup pomegranate seeds
1/4 cup vegan vanilla marshmallows
CREATE
Grab an 8 inch pie pan with a removable bottom, lightly grease with some avocado or coconut oil. If you don't have a pie pan with a removable bottom, just lay down a piece of parchment paper on a regular pie pan for easy removal.
In a bowl, combine all the crust ingredients together and stir well. Pour into your pan and press evenly along the bottoms and sides. Place in the freezer to set while you prepare the rest.
In a heat safe bowl, add the chocolate chips and set aside
Add coconut milk + pomegranate juice to a saucepan and bring to a boil. As soon as it boils, turn it off and pour over the chocolate chips. Let it stand for a minute before whisking until creamy.
Remove crust from the freezer and pour chocolate filling into it. Smooth and spread with a silicone spatula and top with pomegranate seeds + marshmallows.
Place into fridge to set and cool for an hour or two. Slice and serve with a side of vegan vanilla ice cream or a glass of hot nut milk.
