Date Banana Oat Pancakes

Using only 8 ingredients, this gluten-free and refined sugar free breakfast or snack is incredibly satisfying, wholesome, hearty, and energizing. I’ve been making this deliciously simple recipe for years and we are still obsessed. These couldn’t be easier to make! I love spreading almond or sunflower seed butter on them and topping with some blueberries, strawberries, raspberries, pomegranates or anything sweet and healthy nearby. Have fun making them!

INGREDIENTS
2 cups rolled oats, blended into a flour
3 ripe bananas, mashed with a fork
4 eggs
2 tbsps of ground flax seeds
3 dates, chopped
1 tsp vanilla extract
a few dashes of cinnamon
1/2 cup almond or oat milk
1/2 tbsp coconut oil, to cook
almond butter, for topping
berries, for topping
honey or maple syrup, for topping
CREATE
Make your own oat flour by pouring the rolled oats into a blender or food processor and blending until the oats have turned into flour
In a large bowl, mash the bananas. Add eggs and mix. Pour in the oat flour and mix well. Add ground flax seeds.
Add the chopped dates, vanilla extract, or cinnamon, and mix. Add in the almond milk and mix well.
Heat a non-stick pan on medium heat (I use a cast iron skillet), add coconut oil and allow it to melt
Add a few spoonfuls of batter to the heated pan and allow the pancakes to cook undisturbed for 1-2 minutes before flipping. Cook on the other side for 1 more minute. They should be a beautiful golden brown
Transfer pancakes to a serving plate and cover with a clean kitchen towel to keep warm while you cook the rest of the batter
Top with fresh fruit and serve with nut butter and honey!
NOTES
Mindful Tip: double the recipe to make pancakes that last the entire week. You can make them into a pancake sandwich with fruit in the middle for breakfast or lunch on-the-go, or for a pre/post workout snack.
Zero Waste Tip: Save the banana peels to polish and brighten your houseplant leaves. Instead of promoting mold growth by spraying the leaves with water, create a healthy glow by wiping away the dust with the banana peels. A dust covered plant isn’t able to fully absorb the sun’s rays.
