Papaya Breakfast Boat

Papaya breakfast boats are a sweet + simple, delicious nutritious, refreshing way to start your day. This raw, vegan, gluten-free and paleo recipe is incredibly filling and satisfying, full of fiber, protein, folate, antioxidants, and vitamins A and C. Papaya also has papain, a gut healing digestive enzyme that helps aid protein digestion. It’s peak season now so go to your local farmers market or grocery store and pick out a ripe one with skin in the shade of yellow, red or orange for a buttery + sweet flavor.
INGREDIENTS
1 Papaya
1 cup dairy-free yogurt
1 cup granola
A handful of strawberries, kiwi, and blueberries
2 tbsps Chia Seeds
2 tbsps Hemp Seeds
1 tsp Bee Pollen
Honey
CREATE
Slice open your papaya, scoop out the seeds and save them to make your own pepper later
Wash and slice up your fruit, set aside
Add 1/2 cup of yogurt into each hollowed out papaya
Pour in the granola and add sliced fruit
Add the honey, chia seeds, hemp seeds, and bee pollen
NOTES:
Mindful Tip: Peak season is summer through fall so visit your local farmer’s market or grocery store and pick a ripe one with skin in the shade of yellow, red or orange for a buttery and sweet flavor.
Zero Waste Tip: When you scoop out the papaya seeds, dry them thoroughly with a kitchen towel. Then place them onto a plate under the sun for a day or two. Once they are completely dry, grind them up as you would pepper seeds or coffee beans. You’ll have your own homemade nutritious pepper. Use as a seasoning on salads, eggs, or anything else you’d like.
